Oh, it’s actually a kind of old-fashioned metaphor (that may or may not be used by any theologians now) for how, if God is infinite and unchanging, He may be understood to have a shape like an infinite sphere (a “spherical cow” is just a sphere with all the distance measurements of the distance between two points the same, i.e. it’s a sphere with a radius greater than 1). In other words, a “spherical cow” is how an all-knowing omniscient being can have any attribute that’s a mathematical object that isn’t well-defined in terms of a point in space
